  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced
  • 1 tablespoon chopped parsley

How To Make Easy Baked Lemon Chicken Breasts

1. Pound the chicken to an even thickness.

Flatten the chicken breasts a bit so they cook at the same pace and nobody ends up with dry edges and a thick center.

2. Whisk together the lemon mixture.

Stir the olive oil, lemon juice, zest, garlic, Italian seasoning, red pepper flakes, salt, and black pepper until it looks blended and loose.

3. Coat the chicken in the baking dish.

Lay the chicken in a baking dish and pour the lemon mixture over the top so every piece gets glossy and well seasoned.

4. Bake until the chicken turns golden.

Bake at 400 F for about 25 minutes, or until the chicken looks golden and the juices in the pan start bubbling around it.

5. Add the lemon slices and parsley.

Scatter the lemon slices and chopped parsley over the hot chicken so the pan looks bright and finished instead of plain.

6. Spoon the pan juices back over the top.

Tilt the dish a little and spoon the garlicky lemon juices over the chicken so the top stays glossy and full of flavor.

7. Slice one piece to check the center.

Cut into the thickest piece before serving and make sure the middle looks fully cooked and juicy instead of dull and tight.

What to Look for in the Pan

The chicken should look lightly golden on top and sit in bright juices instead of pale liquid.
