Garlic Butter Green Beans

Fresh green beans are blanched until bright and crisp-tender, then quickly tossed with butter, garlic, salt, and pepper in a hot skillet.

Ingredients

  • 1 pound fresh green beans
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, finely minced
  • 1/2 teaspoon kosher salt, plus more for the blanching water
  • 1/4 teaspoon freshly ground black pepper


Instructions

  1. Trim the tough stem ends from the green beans.
  2. Bring a large pot of salted water to a boil and prepare a large bowl of ice water.
  3. Boil the beans for 3 to 4 minutes, until bright green and crisp-tender.
  4. Drain and immediately place them in the ice water. Cool for 2 to 3 minutes, drain, and pat completely dry.
  5. Melt the butter in a large skillet over medium heat. Add the garlic and cook for 30 to 60 seconds, until fragrant but not browned.
  6. Add the beans, salt, and pepper. Toss and cook for 3 to 4 minutes, until hot and glossy. Adjust the seasoning and serve.

Notes

  • Very thin green beans may need only 2 minutes of blanching.
  • Dry the beans thoroughly before adding them to the butter.
  • Blanch and refrigerate the beans up to one day ahead; finish them in the skillet before serving.
  • Refrigerate leftovers within two hours and use within four days.
