Ingredients

Scale
  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 scallions, sliced
  • 1/2 teaspoon red pepper flakes

Instructions

  • Whisk together the soy sauce, honey, garlic, ginger, and red pepper flakes.
  • Add the chicken thighs to the slow cooker.
  • Pour the sauce over the chicken.
  • Cook on low for about 4 hours until the chicken is tender.
  • Add the scallions near the end.
  • Mix the cornstarch with water and stir it in if you want the sauce thicker.
  • Serve hot with plenty of sauce.

Notes

  • Add the scallions near the end so they keep a little color.
  • The cornstarch slurry is useful if you want a thicker sauce.
  • Keep the leftovers stored with the sauce so the chicken stays moist.
